Like Heidi Gibson and Nate Pollak's Grilled Cheese Kitchen, this title strives to elevate the humble grilled cheese sandwich. Chef Greenspan, who honed his skills with culinary idols such as Alain Ducasse and Ferran Adrią, approaches his subject with earnestness, steering clear of kitsch. After sharing grilled cheese cooking basics and a few ultrasimple recipes, he quickly segues into complex variations, including "Frenchie," a blue cheese and baguette sandwich with ham and homemade date marmalade, and "The Champ," a taleggio and raisin walnut bread sandwich with short ribs and apricot-caper spread. These creative concoctions are grouped by cheese type (e.g., American, cheddar, bloomy and washed rinds, goat) and include a few breakfast- and dessert-appropriate options.
