This well-designed foray into the world of milk production and dairy farming, part of the True Book: Farm to Table series, investigates the process by which milk is gathered and made safe for human consumption. In four chapters, it explains first how cows were originally domesticated, and how their milk is pasteurized, before it goes into the facts of modern-day dairy farming, including the caretaking of cows, the homogenization and processing of milk, and lactose intolerance in humans. Brightly colored graphics are interspersed with the text, charting a variety of milk-related facts (Global Milk Production by Species, What Forms of Milk Are Sold?), and close-up photos of cows appear regularly. Though the ethical problems with dairy farming are only superficially addressed, this does include a plea and a rationale for a more humane approach.--Reagan, Maggie Copyright 2017 Booklist
